A classic Collins is a sour cocktail made with a base spirit (most usually gin), lemon juice, sugar and carbonated water, served long over ice in the glass named after it. At The Skylark, we’ve shaken things up a bit.

Swapping Ketel One Cucumber Mint Vodka for gin, we mix it with St Germain, fresh lemon juice and simple syrup. Garnished with a cucumber ribbon, fresh mint and a lemon wedge, this tangy yet refreshing cocktail will keep you cool as a cumber throughout the summer season.
